Tupig

What in the world is tupig? No it's not two pigs--although that's how it sounds like when you say it...no meat product in there. It's a native rice cake that is common in the northern part of Luzon. It's made of rice flour and coconut and sugar wrapped in banana leaves and grilled. I've almost forgotten how good this is, the aroma of the tupig that I warmed up in the oven toaster was intoxicating. A hundred pieces were sent to us and had to be refrigerated and warmed as needed. I'm going to be a little bit stingy with these--I don't think I've seen any here in Manila and if ever there were, I'm sure it's not as good as the ones from the province.

A warmed-up tupig is excellent when paired with something hot, like tea or coffee--maybe that's just me. You can enjoy it whichever way you want.

I remember my Mom bringing these back to Manila every time she visits her childhood home in Munoz, Nueva Ecija. She always requests tupig, she even had someone to bring them over to us here in US! They're so good, chewy & sticky plus the grilled toasty bits - you just made me crave them!

I have only seen this dish on blogs. I never had one. Yours look good.
